Marmite Mitey Mac & Cheese
Makes: 4 – 6 portions Temperature: 190 °C / 375 °F
Preparation Time: 1 hour Cooking Time: 20 – 30 minutes
Ingredients
| 30 | ml | Olive oil (2 Tbsp) |
| 50 | g | Short pasta of choice |
| 75 | g | Butter |
| ½ | Medium onion, chopped | |
| 1 | Garlic clove, chopped | |
| 75 | g | Flour |
| 400 | ml | Milk (1 ⅔ Cups) |
| 100 | ml | Cream (± ⅓ Cups) |
| 7 | ml | Salt (1 ½ tsp) |
| 150 | g | Cheddar cheese, grated |
| 7 | ml | Marmite (1 ½ tsp) |
| 40 | g | Bread crumbs |
Method
- Bring a large pot of water to the boil. Add the oil and pasta. Cook for 6 – 8 minutes, until al dente (firm to the bite). Drain well and set aside.
- In a saucepan, melt the butter over low to medium heat. Add the onion and garlic and sauté for about 3 minutes, until soft. Whisk in the flour and cook for about 3 – 5 minutes, stirring continuously until mixture turns a light golden brown.
- Gradually whisk in milk and cream and whisk until smooth and lump-free. Continue cooking and whisking until the sauce reaches the desired thickness. Stir in salt and remove from the heat.
- Gradually stir in the cheese and stir until melted and the sauce is smooth. Mix in the Marmite.
- Pour the cheese sauce over the pasta and mix well. Transfer the mixture into a greased baking dish and sprinkle breadcrumbs over the top. Bake in a preheated oven at 190 °C / 375 °C for 20 – 30 minutes, until the top is golden brown. Remove from oven and allow to cool for about 10 minutes before serving.
