Marmite Zing Nuggets
Makes: 4 Portions Cooking: Frying
Preparation Time: 30 minutes Cooking Time: 10 – 20 minutes
Ingredients
Chicken:
| 500 | g | Chicken breasts |
| 30 | ml | Marmite (2 Tbsp) |
| 30 | ml | Soy sauce (2 Tbsp) |
| 15 | ml | Honey (1 Tbsp) |
| 15 | ml | Lemon juice (1 Tbsp) |
| 5 | ml | Garlic powder (1 tsp) |
| 3 | ml | Black pepper (½ tsp) |
Crumb Coating:
| 250 | ml | Panko breadcrumbs (1 Cup) |
| 125 | ml | Cake flour (½ Cup) |
| 5 | ml | Paprika (1 tsp) |
| 3 | ml | Grated Cheddar cheese (½ tsp) |
| Oil for frying |
Method
- In a bowl, whisk together the Marmite, soy sauce, honey, lemon juice, garlic and black pepper.
- Cut the chicken breasts into bite sized nuggets and add the chicken pieces to the marinade and mix until well coated. Allow it to stand for at least 10 minutes, or up to 1 hour for a stronger flavour.
- In a shallow dish, combine the breadcrumbs, flour, paprika, salt and black pepper.
- Remove each piece of chicken from the marinade and press it into the crumb mixture so its evenly coated.
- Place the coated nuggets on a plate and allow them to stand for 5 minutes to help the coating to stick.
- Heat the oil over medium – high heat. Fry the nuggets in batches for 3-4 minutes on each side, or until golden brown and cooked through. Drain on paper towel.
