Marmite Creamed Spinach

Makes: 4 – 6 portions   Cooking: Simmering
Preparation Time: 20 – 25 minutes    Baking Time: 10 minutes

Ingredients

500 g Spinach, washed and chopped
30 ml Butter (2 Tbsp)
1 Medium onion, chopped
2 Garlic cloves, chopped
15 ml Cake flour (1 Tbsp)
250 ml Milk (1 Cup)
125 ml Fresh cream (½ Cup)
5 ml Salt (1 tsp)
5 ml Black pepper (1 tsp)
7 ml Marmite (1 ½ tsp)

Method

  1. Bring a pot of water to the boil. Add the spinach and blanch for 2 – 3 minutes until wilted. Drain well and squeeze out excess water. Chop finely and set aside.
  2. In a large pan, melt the butter over medium heat. Add the onion and garlic and sauté for 3 – 4 minutes until soft. Stir in flour and cook for 1 minute.
  3. Gradually whisk in the milk and cream until smooth and thickened, for about 5 minutes. Season with salt and pepper.
  4. Add the chopped spinach and Marmite to the sauce and stir until the spinach is well coated and heated through. Serve hot.
