Marmite Umami Banana Bread
Makes: 1 Loaf Temperature: 180 °C / 350 °F Preparation Time: 1 Hour 15 minutes Baking Time: 50 minutes – 1 hour
Ingredients
| 210 | g | Flour (1 ¾ Cups) |
| 5 | ml | Bicarbonate of soda (1 tsp) |
| 5 | ml | Salt (1 tsp) |
| 2 | ml | Cinnamon (½ tsp) |
| 115 | g | Margarine, softened (½ Cup) |
| 165 | g | Brown sugar (¾ Cup) |
| 2 | Large eggs | |
| 5 | ml | Vanilla essence (1 tsp) |
| 3 | Bananas, ripened and mashed | |
| 7 - 10 | ml | Marmite (1 ½ tsp - 2 tsp) |
| 1 | Banana, ripe and cut in half |
Method
- In a mixing bowl, combine the flour, bicarbonate of soda, salt and cinnamon. Set aside.
- In a separate bowl, cream together the margarine and brown sugar until light and fluffy. Beat in the eggs one at a time, mixing well after each addition. Add the vanilla essence, mashed bananas and Marmite. Mix until well combined.
- Using a spatula, gently fold the dried ingredients into the batter until just combined. Do not overmix. Pour the batter into a greased bread tin and place the halved banana pieces on top of the batter, cut side facing up. Bake in a preheated oven at 180 °C / 350 °F for 50 – 60 minutes or until a skewer inserted into the centre comes out clean.
