Marmite Umami Banana Bread

Makes: 1 Loaf   Temperature: 180 °C / 350 °F Preparation Time: 1 Hour 15 minutes    Baking Time: 50 minutes – 1 hour

Ingredients

210 g Flour (1 ¾ Cups)
5 ml Bicarbonate of soda (1 tsp)
5 ml Salt (1 tsp)
2 ml Cinnamon (½ tsp)
115 g Margarine, softened (½ Cup)
165 g Brown sugar (¾ Cup)
2 Large eggs
5 ml Vanilla essence (1 tsp)
3 Bananas, ripened and mashed
7 - 10 ml Marmite (1 ½ tsp - 2 tsp)
1 Banana, ripe and cut in half

Method

  1. In a mixing bowl, combine the flour, bicarbonate of soda, salt and cinnamon. Set aside.
  2. In a separate bowl, cream together the margarine and brown sugar until light and fluffy. Beat in the eggs one at a time, mixing well after each addition. Add the vanilla essence, mashed bananas and Marmite. Mix until well combined.
  3. Using a spatula, gently fold the dried ingredients into the batter until just combined. Do not overmix. Pour the batter into a greased bread tin and place the halved banana pieces on top of the batter, cut side facing up. Bake in a preheated oven at 180 °C / 350 °F for 50 – 60 minutes or until a skewer inserted into the centre comes out clean.
